Jamie Cooks Italy is a glorious food travel series in which Jamie Oliver goes in search of Italy's very best home cooks to bring us extraordinary Italian dishes that turn the simple into the sublime.

Jamie loves Italy the landscapes, the people and, above all, the most incredible food. But Italian food isn't about Michelin-starred chefs, it's about home-cooked recipes. So, in this epic series Jamie and his best friend and mentor Gennaro Contaldo will travel far and wide from sun-drenched Sicily to the snowy Alps to meet the superstars of the Italian kitchen the mammas and nonnas of Italy.

They've perfected recipes handed down through the generations and Jamie is determined to learn their kitchen secrets. Having been put through his paces by legendary but no-nonsense nonnas, Jamie will put his twist on some of Italy's most delicious home-cooked dishes. A good pangrattato (flavoured crispy breadcrumbs) has the ability to add not only flavour, but also incredible texture to a meal. The use of horseradish here is very unusual, yet very delicious and makes total sense as it was one of the few vegetables growing locally to Teresa. Dishes like this respect the scarcity of ingredients.

This is a wonderful way to flavour and enjoy a leg of lamb. In the pictures you’ll see I cooked two the old-fashioned way over fire, and of course you’re welcome to do the same if you can, but I’ve written this recipe for roasting in a standard oven. Get some lovely local lamb from your butcher and get them to bone it, too.
