pastry:
3 cups all-purpose flour
1/2 tsp salt
3/4 cup cold unsalted butter (cut into pieces)
1 cold large egg
6 tbsp cold water
1 tsp white vinegar or lime juice
filling:
1 tbsp vegetable oil
1/2 cup onion (diced)
2 cloves garlic (minced)
1 tbsp peeled & grated fresh ginger
2-3 tsp garam masala
1/2 tsp ground cardamom
chilli paste (desired)
225 g peeled & diced sweet potato (cut into 15 mm)
3/4 chicken or vegetable stock
3/4 cup cooked green lentils (about 30 g dry)
salt & pepper
fresh lime juice
1 egg (whisked with 2 tbsp cold water)
The pockets can be enjoyed warm or at room temperature.
