Water Chestnut Drink

A super refreshing, clean and sweet chestnut drink. Under 45 mins, you roughly smash up a bunch of water chestnuts, and let it all simmer in large pot of water. Some drink it just like that. Others like a touch of sweetness, and so melt in some crystal rock sugar for that. You can have it warm or chilled. In Traditional Chinese Medicine, it’s believed to reduce body heat, relieve indigestion, and help you breathe easily by clearing phlegm.

Probably one of the most inexpensive thirst-quenchers around. Chewy white Barley pearls simmered in water is a simple and effective all-day drink. Gently boil for under 20 mins to let the nutty grains infuse the boiling water with a classic clean sweetness that’s easy to drink. Still too plain? Drop in naturally sweet rock sugar and candied winter melon, the choice sugar for a cool jug of barley water. Traditional Chinese Medicine practitioners warn against over boiling though, or letting the barley spilt. They say if that happens, the drink loses its “cooling” properties. So keep your eye on the pot!

A warming sweet fruit drink famously used to calm irritated throats and other respiratory annoyances. It’s easy to make too, in 10 mins, you crack and break the monk fruit drink into smaller pieces, then boil it with a comforting blend of honey dates, apricot kernels (north and south almond) and sweet dried figs. Too sweet for your liking? Use less monk fruit, for its 200 times sweeter than sugar.
