Pilaf or Pilau is a fluffy rice dish that’s often cooked in rich stock with spices, vegetables or meat to obtain the best of flavors. In this One-Bowl Microwave Veggie Pilau Rice, the cooking process is sped up with a handy microwave without comprising the bright colors or aromatic flavors. Pair it with some curry, a fried egg or have it by itself for a fulfilling meal for you or your family

Instructions

  1. Mix rice

    • Place the rice, turmeric, garam masala, butter, thawed vegetables and a pinch of salt and pepper in a microwave-proof bowl.
    • Crumble the half stock cube over, then pour 300ml boiling water into the bowl. Stir to mix everything.
    • Cover the bowl with clingfilm, poking a hole with a fork or knife.
    • Microwave the rice on high for 7 minutes, then on medium for 5 minutes.
    Mix rice


Plate and Serve!

Let the rice rest for 5 minutes. Season to taste if necessary, and fluff up before serving.
