Ingredients

  • Serves 4 people
  •  1 lotus root (peeled, and thinly sliced)

  • 2 cups corn starch

  •  2 tbsp salt

  •  1 tbsp pepper

     

  • tobiko mayo sauce:

    1.5 tbsp tobiko

  • 3 tbsp mayo

  • 1/3 lime

     

  • honey soy sauce:

    2 tbsp honey

  • 3 tbsp dark soy sauce

  •  1/3 lime

  •  1 – 2 tbsp apple cider vinegar

  • vegetable cooking oil

Lotus Root Chips with Two Dips

Vegetable chips are all the rage these days. This Lotus Root Chips with Two Dips is easy to make your own at home and though it might take quite a bit of oil, it introduces and encourages kids to eat their vegetables. We would say Lotus Root is probably the best deep-fried vegetable as its starchy and fibrous natural texture allows it to hold up its shape when it in the fryer. Not to mention they are super-addictive kind of crunchy! You can air fry or bake these for a healthier alternative. Two dips, including a sweet savory soy honey is perfect with these chips. One tip – I added a dash of apple cider vinegar in the dip as it’s good for building immunity and adds a delicious tangy taste that my son loves.

Instructions

  1. Serve with lotus root chips

    • Thinly slice lotus root — about 1-2mm
    • Mix corn starch with salt and pepper
    • Cover the lotus root in corn starch mixture, tapping off excess flour 
    • Heat oil
    • Deep fry on medium high heat, dip a chopstick into the oil, once bubbles start rising towards the surface, try placing a small piece in, if it floats to the surface, it’s ready
    • Drain lotus root chips on paper towels

    | Lotus root can be replaced with beetroot or any root vegetables.

    Serve with lotus root chips


  2. Prepare Dip 1 – Tobiko Mayo

    • Mix tobiko + mayo
    • Squeeze in lime to taste 
    • Refrigerate until needed

    • Mix honey, dark soy sauce, and apple cider vinegar
