Ingredients

  • Serves 3-4 people
  • 4 cups cooked overnight rice 

  • 1 cup diced cherry tomatoes 

  • 150-200 g minced chicken 

  • 2 tbsp ketchup 

  • 2 tsp light soy sauce 

  • 200 g shredded cheese - mozzarella, cheddar, Swiss or a mixture 

  • 1 egg 

  • 1 tbsp sesame oil 

  • salt and freshly ground white pepper (to taste)

  • chopped spring onions (to garnish)

Cheesy Baked Tomato Fried Rice

Take fried rice up a notch by baking it with an ooey, gooey cheesy layer. Below that melting bed of cheese lies soft rice infused with saucy cherry tomatoes, fragrant sesame oil and succulent white chicken bits. We’ll say it-this under one hour recipe is a sure crowd-pleaser.

Instructions

  1. Fry the rice

    • Preheat oven to 200C.
    • In an ovenproof pan, heat up sesame oil.
    • Fry the minced chicken until lightly golden brown. 
    • Add the tomatoes, and saute. 
    • Toss the rice in and mix evenly.
    • Stir in the ketchup, soy sauce and ground white pepper. Season to taste with salt if needed.
    • Make a hole in the rice and crack in an egg. Toss to combine.
    Fry the rice


  2. Bake cheesy rice

    • Lightly flatten the rice, and top with the shredded cheese.

Plate and Serve!

Bake for 20-25 minutes, until bubbling and golden brown on top. Serve!
