4 cups cooked overnight rice
1 cup diced cherry tomatoes
150-200 g minced chicken
2 tbsp ketchup
2 tsp light soy sauce
200 g shredded cheese - mozzarella, cheddar, Swiss or a mixture
1 egg
1 tbsp sesame oil
salt and freshly ground white pepper (to taste)
chopped spring onions (to garnish)
Bake for 20-25 minutes, until bubbling and golden brown on top. Serve!
