Stir-Fried Mackerel With Vegetables

Stir-fried mackerel with vegetables is a healthy dish that uses nutrient-rich mackerel and vegetables, and is so easy to make. Seasoning with sesame dressing gives it a rounded, balanced flavor.

Instructions

  1. Freezing the mackerel

    • Cut the mackerel into bite-sized pieces 
    • Make an ice bath. Add three cups of ice to a bowl, then add enough water to cover the ice. 
    • Place the bite-sizedmackerel into the ice water for two seconds and remove. After removing, place the mackerel into a freezer bag.
    • Remove air out of the bag and seal it with the zipper. 
    • Write the expiration date on the bag.
    • Put it in the freezer.(A freezer temperature around -18 °C is best.)


  2. Freezing the carrot and cabbage

    • Cut the carrot and cabbage into small pieces. 
    • Place the carrot and cabbage pieces into separate freezer bags.
    • Remove air out of the bag and seal it with the zipper. 
    • Write an expiration date on the bag.
    • Put it in the freezer. (A freezer temperature around -18 °C is best.)


  3. Defrosting the mackerel, carrot, and cabbage (When cooking it for dinner)

    • On the morning of the day that you intend to cook it, take the freezer bag out of the freezer and put it into the refrigerator.


  4. Preparing the seasoning blend

    • Mix together the sesame dressing and soy sauce in a bowl.


  5. Seasoning the ingredients

    • Add the defrosted mackerel, carrot, and cabbage to the bowl containing the seasoning blend and mix thoroughly so that the seasonings coat the ingredients.


  6. Stir-frying

    • Add oil to afrying pan over medium heat. 
    • Once the frying pan is hot, add the seasoned mackerel and vegetables along with the seasoning blend and cook for 3-4 minutes or until the sides of the mackerel are golden brown.


Plate and Serve!

Make sure to add additional seasonings to the ingredients after completely mixing together the seasoning blend.
