Coney Dogs

{{totalReview}}
I remember making these Coney Dogs for the first time when I was twelve. My school had a canteen day festival where students could set up a little stall to sell their own food. Nestled in a sesame bun, the juicy chicken sausage is topped with a savory chili beef sauce and chopped onions to create a delicious hotdog that was a hit with both kids and adults alike.

Instructions

  1. Preparing the beef sauce

    • Dice up the 2 large white onion and the bacon, set aside.
    • In a pan, heat up 100g vegetable oil, and fry the ground beef.
    • Add the butter to the pan. This will help in the browning of the beef.
    • In a separate pot, heat 100g vegetable oil and fry the diced beef bacon.
    • To the bacon, add 2 cloves and the diced white onions.
    • When the beef has browned, add the red wine. This will help deglaze the pan and loosen the pieces of beef that are stuck to the pan.
    • Transfer the deglazed beef to the pot with the beef bacon and onions.
    • To the pot, add the red chili powder, ground black pepper, tomato paste, wholegrain mustard, 680g water and simmer it

  2. Preparing the hotdogs

    • Heat 100g vegetable oil in a pan.
    • Score the sides of the chicken sausages before frying them in the pan till they are golden brown.
    • Once the sausages are cooked, place them on a paper towel to drain excess oil.
    • To the chili beef, add cocoa powder to give the sauce more body and an earthy flavor. Turn off the heat.
    • Dice up the remaining ½ white onion for garnish.
    • Slice the hotdog bun in half and place a chicken sausage inside each bun.
    • Scoop the chili beef sauce onto the bun, about 2 tbsp of sauce or more if you prefer.
