  • 2 chicken popsicles
  • 250 g chicken (minced)

Chicken Popsicles

A Chicken Popsicle is a chicken patty styled popsicle. A chicken patty is a great alternative to chicken nuggets when it comes to a healthier choice of main dish protein. Juicy minced chicken is mixed with egg, chopped onion, spring onion, some seasonings and formed into a heart shape, and attached to an ice-cream stick. Chicken Popsicles are best served with a dipping sauce such as teriyaki sauce, chili sauce, etc or with a side dish such as a salad or vegetables.

Instructions

  1. Prepare chicken patties

    • Cut chicken into cubes and mince.
    • Crack 1 egg into a bowl with minced chicken. Mix well, followed by seasonings (tapioca starch, pepper and salt). Mix until well combined. Lastly, mix in diced onion and spring onion.
    • On baking paper/aluminium foil, sprinkle some tapioca starch so the shape can hold more firmly, take 2 tbsp full of minced chicken and shape it into heart shaped patty.
    • Heat 1 tsp. of olive oil in a frying pan over medium-low heat. Slowly transfer the heart shaped chicken patty in the hot pan and grill for about 5 min. Then flip over and continue cooking until golden brown and cooked through. Remove from heat.

  2. Prepare the popsicles

    • Insert an ice cream stick from the bottom of the heart shaped chicken patty to make it a popsicle. 
    • Repeat this step to make another popsicle.

  3. Prepare the Accompaniments and garnish

    • To cut cucumber flowers: Cut a few cucumber slices. On the surface of a cucumber slice, make 5 to 6 downward V shaped incisions so it looks like flower petals.
    • To cut carrot flowers: Cut a few carrot slices. Using flower cutter, cut out flowers.
    • To cut cherry tomato flowers: Insert the tip of knife to the centre of cherry tomato, make downward V shaped incisions all around the tomato. Gently twist and pull the cherry tomato apart.
    • To assemble: Line a plate with salad leaves. Place chicken popsicles on the plate and fill the gaps with steamed sweet potatoes slices, carrot flowers, cucumber flowers, and purple cabbage.


Plate and Serve!

The chicken patty might be out of shape as it is transferred from aluminium foil/baking paper into frying pan, use a spatula to touch up the shape of the chicken patty if needed.
