  • Serves 4-6 people
  • 1 chicken breast (diced)

  • 2 eggs (beaten)

  • 1 cup quick (instant oatmeal)

  • 1 carrot (diced)

  • 1 cup (chopped broccoli)

  • 1 stalk celery (small diced)

  • 2 stalks spring onion (thinly sliced)

  • 1 red onion (diced)

  • 4 garlic cloves (minced)

  • 2 inch ginger (minced)

  • 2 tbsp fried shallots

  • 1 tsp soya sauce

  • 1 ½ tsp white pepper

  • ½ tsp ground cumin

  • ½ tsp ground coriander

  • ½ tsp chilli powder

  • 6 tbsp oil (4 tbsp + 2 tbsp)

  • 1 tsp salt

  • 2 cups water

Chicken Oatmeal

This savoury oatmeal dish is perfect for a good nutritional light meal yet rich, thick and hearty at the same time. High in fiber, packed with important vitamins and minerals.

Instructions

  1. Frying

    • Heat up 4 tbsp oil in a pot under low medium heat.
    • Add onions and fry till translucent.
    • Add minced garlic and ginger


  2. Boiling/ Frying

    • Add chicken, soya sauce, cumin, coriander, white pepper and chilli powder. Stir well and leave chicken to cook through.
    • Add water. Leave to boil.
    • Add carrot and celery. Stir well. Leave to cook.
    • Add broccoli. Leave to cook.
    • Add oatmealand 1 tsp salt..Cook till thickens
    • Turn heat off. Remove from stove. 
    • In a pan, heat 2 tbsp oil under low medium heat. Gently place beaten egg and leave to cook till edges are lightly browned. 
    • Remove from heat. Roll omelette and slice thinly.


Garnish and Serve!

Place cooked oatmeal into a bowl. Garnish with sliced omelette, spring onions and fried shallots
