chicken marinate:
1.5 kg whole chicken (cavity emptied and cleaned)
2 tbsp salt
3 tbsp light soy sauce
4 tbsp ginger juice
stuffing ingredients:
2 tbsp shallot oil
½ tin bamboo shoot (chopped)
8 pcs shiitake mushroom (chopped)
1 packet Preserved Szechuan vegetable (chopped)
To serve, cut open the wrapper and discard the foil. Carve the chicken and serve with stuffing.
