  • chicken marinate:

    1.5 kg  whole chicken (cavity emptied and cleaned)

  • 2 tbsp salt

  • 3 tbsp light soy sauce

  • 4 tbsp ginger juice

  • stuffing ingredients: 

    2 tbsp shallot oil

  • ½ tin bamboo shoot (chopped)

  • 8 pcs shiitake mushroom (chopped)

  • 1 packet  Preserved Szechuan vegetable (chopped)

A long, slow cooking process, but we guarantee it's worth the wait for this flavourful dish. Beggar's Chicken may seem like a daunting recipe to recreate, but it's one of the easiest in haute cuisine

Instructions

  1. Marinate chicken

    • Pre-heat oven to 180°C. 
    • Rub chicken with soy sauce, ginger juice and salt. Leave it marinating in a bowl for at least 30 minutes. 


  2. Fry stuffing

    • Heat shallot oil and fry mushroom, bamboo shoot and Szechuan vegetables for 3 minutes.


  3. Stuff chicken

    • Lay out a piece of parchment paper onto a piece of foil, arrange chicken in the middle and wrap the chicken as compactly as possible. 


  4. Cook chicken in oven

    • In the oven, leave chicken baking for 1.5 hours. 


Plate and Serve!

To serve, cut open the wrapper and discard the foil. Carve the chicken and serve with stuffing.
