  • cookies:

    200 g butter

  • 2 egg yolk

  • 50 g sugar

  • 350 g flour 

  • 1 tbsp corn flour 

  • 1/4 tsp vanilla syrup 

  • pineapple chia jam: 

    1 pineapple (finely grated)

  • 60 g sugar 

  • 5 cloves 

  • 1 cinnamon stick 

  • 50 g chia seed 

  • 2 egg yolk (egg wash)

  • 1 tbsp water (egg wash)

Healthy Pineapple Tarts (Nastar Sehat)

Who doesn’t love the gooey, sweet, sticky pineapple tarts? We can literally pop them by the dozen if no one is watching. Nastar Sehat or Pineapple tarts have been a staple dessert snack during Hari Raya and Chinese New Year. This version of Healthy Pineapple Tarts uses less sugar in both the cookies and pineapple paste while retaining the yummy, melt-in-your-mouth base and lightly spiced topping. Make it a fun family affair by getting the kids to help shape the base into circles, flowers or heart shapes to hold the pineapple paste. Just make sure they are about the same size for baking evenly.

Instructions

  1. Make the pineapple jam

    • Cook grated pineapple with sugar, cloves and cinnamon over low heat.
    • Cook until the water evaporates, add chia seed stir well and it will thicken, once thick enough, turn off the heat and let it cool

  2. Make cookie dough

    • Beat eggs, sugar, vanilla, butter, until well blended.
    • Add corn starch, flour, mixed until become dough
    • Take a little dough, round it and fill with pineapple jam

  3. Bake cookies

    • Prepare a baking sheet, spread with baking paper, place the cake mixture onto a baking sheet
    • Brush with mixed of egg yolk and water
    • Bake the cake in 175 degrees Celsius for about 15 minutes or until the cookies are cooked.
