  • 1 tsp dried rosemary

  • juice of half a lemon 

  • salt and pepper

Spicy Lamb with Chickpeas and Quinoa Salad

A hearty but healthy lamb salad that’s easy to prepare and absolutely delicious.

Instructions

  1. Season and cook lamb patties

    • Season the minced lamb with chilli powder, garlic powder, dried rosemary, salt and pepper. Shape them into small patties and set them aside.
    • In a shallow pan, pan-fry the patties till golden brown.


  2. Make salad

    • In a large mixing bowl, add the baby spinach, Quinoa, chickpeas, chilli flakes, a drizzle of olive oil, lemon juice, salt and pepper.
    • Give the mixture a good toss.


Plate and Serve!

Serve the salad on a plate topped with the juicy grilled lamb patties.
