  • Serves 4 people
  • dough mixture:

    500 g flour

  • sprinkle of salt

  • 1 cup of milk

  • 1 cup of water

     

  • stuffing: 

    100 g vegetable oil

  • 1 chopped onion

  • 4 cloves of crushed garlic

  • 200 g minced meat

  • 1 tsp of sweet pepper

  • 1 tsp of cinnamon 

  • 1 tsp white pepper 

  • sprinkle of salt

     

  • sauce:

    1 kg yogurt

  • 1 egg 

  • ½ tsp of salt  

  • 1 tsp of sweet pepper

  • 3 tbsp of corn flour

  • 1 cup of water

Almost every culture in the world has their version of a dumpling and the Middle East has its Shish Barak. These little plump dumplings are filled with minced meat and baked before mixed with a tangy yogurt sauce. The result is crisp, juicy meat puffs that are so good on their own, and even better with tart yogurt. Make a bunch of them and freeze so that all you need to do is to get them warm and toasty (in minutes!) It's that easy. Now, serve with a side of rice and you'll have yourself a hearty start to your pre-dawn meal.

Instructions

  1. Make the dough

    • Put the flour in a bowl.
    • Add the salt, the milk, the water and mix well.
    • Spread out the dough using a rolling pin and cut it into small circles.

  2. Make the stuffing

    • Pour the oil into a saucepan
    • Add the onion, the crushed garlic and fry.
    • Add the meat and mix well.
    • Add the sweet pepper, the cinnamon, the white pepper, the salt and mix.
    • Fill each dough circle with the stuffing and close it well.
    • Bake in the oven for 20 minutes at a temperature of 180°.

  3. Make yoghurt sauce and add shish barak

    • Pour the yogurt into a bowl.
    • Add the egg, the salt, the sweet pepper, the corn flour and mix.
    • Add the water and mix.
    • Pour the yogurt mixture into a saucepan.
    • Cook until it boils.
    • Add the shish barak to the yogurt mixture.
    Make yoghurt sauce and add shish barak


  4. Cook rice

    • Pour the oil into a saucepan.
    • Add the rice, the salt and the water.
    • Leave it until it boils.
    • Cook for 20 minutes over low heat.


Plate and Serve!

Put the shish barak in a serving dish with the rice aside.
