540 g (3 cups) jasmine rice - rinsed and drained
400 g can whole peeled tomatoes (crushed by hand)
200 g minced beef
350 ml chicken stock
1 onion (peeled and chopped)
3 cloves garlic (peeled and chopped)
2 sticks cinnamon
5 cloves
2 bay leaves
2 cardamom pods (lightly crushed)
2 tbsp butter or oil
¾ tsp salt
1 tsp sugar
chopped spring onions or coriander, to garnish (optional)
| Toasting the rice before adding the liquid helps the rice grains to remain separate and adds flavour.
Make sure to separate the minced beef as much as possible with the spatula when frying. This ensures that the meat will be evenly distributed throughout the dish.
Serve garnished with chopped spring onions or coriander.
