  • 540 g (3 cups) jasmine rice - rinsed and drained

  • 400 g can whole peeled tomatoes (crushed by hand)

  • 200 g minced beef 

  • 350 ml chicken stock 

  • 1 onion (peeled and chopped)  

  • 3 cloves garlic (peeled and chopped)

  • 2 sticks cinnamon 

  • 5 cloves  

  • 2 bay leaves 

  • 2 cardamom pods (lightly crushed)

  • 2 tbsp butter or oil 

  • ¾ tsp salt 

  • 1 tsp sugar

  • chopped spring onions or coriander, to garnish (optional)

One-Pot Ramadan Beef and Tomato Rice

This aromatic dish is made with ingredients that can be kept in the store cupboard or freezer, but you would never know it from the fragrance and taste. This is a wonderful rice to serve with other dishes or alone, and is perfect for the whole family.

Instructions

  1. Saute aromatics

    • In a large heavy pan, melt the butter over a medium heat.
    • Saute the onion until translucent. Add the minced beef and fry, breaking the meat up with your spatula, until cooked.
    • Add the garlic, cinnamon, cloves, bay leaves, and cardamom. Saute until fragrant.
    • Stir the rice in, tossing to lightly toast the rice.

    Toasting the rice before adding the liquid helps the rice grains to remain separate and adds flavour. 

    Make sure to separate the minced beef as much as possible with the spatula when frying. This ensures that the meat will be evenly distributed throughout the dish.

  2. Cook the rice

    • Stir in the crushed tomatoes, as well as the salt and sugar. Stir until well combined.
    • Pour in the chicken stock and stir. Bring the pot up to the boil, then cover the pan and turn the heat down to medium. Cook for 10 minutes.
    • Turn the heat down to a low heat, and cook the rice for another 10 minutes.
    • Turn the heat off, and let the rice sit covered for 10 minutes.
    Cook the rice


Plate and Serve!

Serve garnished with chopped spring onions or coriander.
