    Seasonings:

    1⁄2 teaspoon Salt                                                                                

    1 teaspoon Sugar                                                                            

    2 tablespoons Oyster sauce                                                                

    1 teaspoon Soy sauce

It is believed that this dish originated from Chinese people living in Thailand. They noticed that many Thai dishes include fruits as an ingredient and they tried adding pineapple to fried rice. It became very popular with both the Thai people and Westerners.

Directions

  1. Preparing Pineapples

    • Cut the pineapple in half and remove the pineapple pulp.

    • Dice the pineapple pulp and set aside to stir-fry with fried rice.



  2. Making Fried Rice

    • Peel the garlic and chop it finely.

    • Cut the chicken into 1 cm pieces and set aside.

    • Prepare the shrimps by peeling the shell and remove the heads, leaving only the bodies and tails to cook with fried rice.

    • Place a frying pan on low heat, and melt the butter until it starts to boil. Add the garlic and fry until it turns yellow.

    • Place the egg in a frying pan and stir until it is cooked. Add the prepared chicken and shrimp and cook for 2 more minutes.

    • Add the pineapple, then season with salt, sugar, oyster sauce, soy sauce and stir well.

    • Add steamed rice and stir to mix with the other ingredients. Then sprinkle with curry powder.

    • Add raisins, cashew nuts, and toss until all ingredients are well combined.

    • Remove from heat and serve

Assemble & Serve!

  • Transfer the fried rice onto the prepared pineapple. Then sprinkle with pork floss and cashew nuts ready to serve.
