Instructions

  1. Soak tapioca pearls and make pudding

    • In a medium pot, soak the tapioca pearls in the coconut milk for 15-20 minutes. Bring to heat gently –medium heat to avoid boiling. 
    • Add the sugar and keep stirring to prevent sticking. 
    • As you stir, the tapioca pearls will become translucent gradually which means they are cooking through. The pudding will start thickening as you stir. 
    • Once the pearls are cooked and the mixture has reached the pudding consistency, remove from heat and stir in the lemon zest.


Plate and Serve!

Place in serving glasses or plates and either serve hot or cold, topped with mangoes and fresh mint leaves.
