Khao Jee is a popular snack commonly found in the bustling food streets of Laos or Northern Thailand. Once you crunch through its golden exterior, you’ll be greeted by a warm, fluffy and chewy centre that’s highly addictive. Instructions

  1. Soak the sticky rice

    • Add the sticky rice to a mixing bowl or any deep container. Fill it with water so that the water level is at least 3 inches above the rice, as the rice will expand when soaking.
    • Soak for 6 hours or overnight. The longer you soak the rice, the softer the texture

  2. Steam the sticky rice

    • Drain the water and arrange the soaked sticky rice evenly on a bamboo steamer lined with baking paper or muslin cloth.
    • Season lightly with salt.
    • Cover and steam for 30-45 minutes.
    • Keep the sticky rice covered to prevent drying out.

  3. Make rice skewers and grill

    • Break off a handful of rice and roll it into a cylinder.
    • Run a skewer lengthwise through the rice. Repeat until all the rice has been skewered.
    • Grill the skewers on charcoal or on a hot plate until lightly brown all over.
    • Brush the rice with egg on all sides. Allow to crisp up over the fire.
