Crab Stick Salad Roll with Spicy Mayonnaise

For a quick lunch or appetizer, you can make this easy and versatile salad roll which can be filled with a variety of vegetables and meats of your choice, served with a zingy Thai style dipping sauce. A low carb option for a lighter and refreshing meal.

Directions

  1. Make The Dressing

    • Pound chili and garlic together, add fish sauce, lime juice and sugar. Next, add mayonnaise and mix well


  2. Start Assembling

    • Cut cucumber into thin sheets and carrot into thin strips.
    • Soak rice paper until just soft but not overly so, place vegetables and crab stick on top. Roll tightly and slice in half. Repeat with remaining ingredients.
    • Do not over soak the rice paper since it will become too soft and impalpable.
    • Play around with vegetables or change the protein of choice to your liking.
