For an easy and delicious meal that is easy on the waistline, try this dish of canned mackerel in tom yum soup. Canned mackerel became part of Thai cuisine because of its price and accessibility. The fleshy mackerel in tomato sauce gives the traditional tom yum more substance, while the herbs and chili balance out the possible odor and taste of the fish.

Directions

  1. Boil The Ingredients

    • Bring water to the boil in a pot. Crush the lemongrass, shallots and chili lightly with a pestle or back of a knife, then add into the pot together with galangal and sliced tomatoes. 
    • Simmer for about 5 minutes until the aroma of the herbs wafts out.
    • Crushed herbs will release more flavors into the soup.


  2. Start Cooking

    • Add the canned mackerel.
    • Then add the fish sauce, lime juice, and mushrooms. Simmer until mushrooms are cooked.

Assemble & Serve!

  • Tear the kaffir lime leaves into the soup and serve.
