    3 tbsp evaporated milk

  • 1½ tbsp curry powder

  • 1 egg

  • 2 tbsp chili oil

  • 1 tsp light soy sauce

  • 2 tsp oyster sauce

  • ¼ tsp ground white pepper

  • ½ tsp sugar

  • For Noodles:

    1½ tbsp vegetable oil

  • 40 g onion, thickly sliced

  • 1 clove garlic, chopped

  • 200 g flat rice noodles

  • 50 g crab meat

  • ½ red chili, sliced

  • 1 spring onion, chopped into 3 cm lengths

Rice Noodles with Curry Crab

Curry crab is a flavorful way to enjoy the sweet plump meat of the crab, we tossed chewy rice noodles in the curry crab sauce to make it a scrumptious and complete dish on its own. Topped with scarlet droplets of chili oil for an aesthetic touch.

Directions

  1. Prepare the curry sauce

    • Mix curry powder with evaporated milk first. 
    • Combine egg and chilli oil before adding back into the milk mixture. 
    • Season with light soy sauce, oyster sauce, white pepper and sugar.

    Easily dissolve curry powder by mixing it with evaporated milk first.

    Chicken, prawns or even squid would go well in this sauce.

    Prepare the curry sauce


  2. Cook the noodles

    • In the pan, cook onion with oil until translucent. Add garlic and sauce. 

    • Lower the heat and tilt the pan around until the egg softly sets before adding noodles and crab meat.

    • Turn the heat up, tilt the pan until egg is set before flipping.  Stir gently.

    Combine all the seasoning together beforehand to disperse everything well.

    Cook the noodles


Garnish and serve!

  • Garnish with red chilli and spring onion before serving.
