Rice Cakes with Caramelized Coconut

This dessert dates back to the ancient Sukhothai period, and is commonly served for prayers. These rice cakes have no fillings, but coated generously with caramelized shredded coconut. A sweet and tasty dessert with every spoonful!

Directions

  1. Make the rice cake dough

    • Gently add water to the glutinous rice flour.

    • Knead until it is pliable.

    For kneading the dough, adjust the water amount according to the dough. Old flour might need more water than new flour. If the dough is too dry, add more water and if the dough is too wet, add more flour.

  2. Shape the dough

    • Mold the dough into cubes ½ inch in diameter.  

    • Press the dough slightly to flatten into disc shape.

  3. Boil the rice cakes

    • Set water to the boil and cook rice cakes until they float to the surface.

    • Cook for about 30 seconds to ensure that the dough is well cooked.

  4. Make the caramelized coconut

    • Add water and palm sugar in a brass pan.

    • When the mixture boils and the sugar has dissolved, add shredded coconut.

    • Stir for about 10 minutes until the mixture thickens. 

    Coconut sugar or granulated sugar can be used instead of palm sugar.

  5. Add the rice cakes and serve!

    • Add rice cakes into the caramelized coconut sauce.

    • Lift the pan out of the heat.

    • Mix well and serve.
