Mangoes are a staple fruit for Thais, used in both savory and sweet dishes. The sweet fish sauce lies in a realm of both sweet and savory, with caramel notes from palm sugar and briny notes from various types of dried shrimp to serve as an appetizer with sour green mangoes.

Directions

  1. Prepare the dry ingredients

    • Slice shallot and chilies.
    • Pound dried shrimp into powder.

    Dried shrimp adds body to the sauce / Baby dried shrimp provide a delicate texture to the sauce. / Big dried shrimp give a bright red color to the sauce.

    Dried shrimps have many variations, you can just use one type or what is available in your area.

    Prepare the dry ingredients


  2. Make the sweet fish sauce

    • In a saucepan, add palm sugar, fish sauce, shrimp paste and water.
    • Simmer over medium heat until thickened.

    Shrimp paste adds roundness and umami to the dip; however, it is optional and can be omitted.

  3. Add the dry ingredients into sauce

    • Add sliced shallot, chilies and the three types of dried shrimp into the sauce.

Plate and Serve!

  • Slice green mango and serve with the sweet fish sauce.
