  • 240 ml coconut milk

  • 4 green chili, thickly sliced

  • 4 red chili, thickly sliced

  • ½ stalk lemongrass, sliced

  • 1½ tbsp tamarind paste

  • 1½ tbsp coconut sugar

  • 4 kaffir lime leaves, shredded

  • blanched vegetables, for serving

Fermented Soybeans Dipping with Pork

Made from fermented soybeans and coconut milk, this Thai condiment has a delicate and creamy texture. The Fermented Soybean Dip is commonly served as alongside fresh or blanched vegetables.

Directions

  1. Prepare the soybean paste

    • Pound soybean paste with shallots into a rough paste.


  2. Cook the pork

    • Cook coconut milk and minced pork over a medium heat until the pork is cooked.

    You can substitute minced chicken for minced pork.

  3. Add the soy bean paste

    • Add the soybean paste chilies, lemongrass and galangal, season with sugar and tamarind paste, simmer for 5 minutes. Add kaffir lime leaves, lift off the heat,

Plate and Serve!

  • Serve with fresh vegetables and blanched vegetables.

This can be served as a condiment, pasta sauce or salad dressing.
