On Keto but love chicken rice? Now, replace your rice with keto-friendly cauliflower. It’s a great substitute for carb-heavy rice. You get the same garlicky, fat-infused chicken flavour mixed thoroughly into creamy crumbed up cauliflower. Trust me, this is a winning keto chicken “rice” recipe that rivals Singapore’s top hawker food.
If you want to use a chopper, cut the cauliflower into large chunks then chop until pieces are rice-sized.Otherwise, use a grater to grate the cauliflower into rice-sized pieces.
Optional: transfer the chopped cauliflower onto a clean paper towel and press the juices out to dry even further. Or, place the chopped cauliflower into a sifter on top of a bowl then place it in the chiller for about 30 minutes.

Once it’s cooked to your preferred doneness, strain it one more time to reduce the water.
