  • 1.2kg chicken (or about 1 chicken), cut into smaller pieces

    500g potato, peeled and cut into wedges

    150g shallots

    100g garlic

    100g salted bean paste (Tauciu)

    30g gula melaka (palm sugar)

    1 tsp dark soy sauce

    100ml vegetable oil

    400ml water

When my husband and I were still dating, he would take me home for family lunches and dinners after school because he couldn’t afford to treat me to fancy meals. One of my favorite dishes was his elder sister’s Chicken Pongteh, which I only learned to make 7 years after we got married. This Peranakan dish is easy to prepare and uses very few ingredients. Simply braise the chicken with potatoes in a salted bean paste, gula melaka (palm sugar) and soy sauce mixture, for a hearty dish that the whole family can enjoy

Instructions

  1. Prepare the chicken

    • Heat a wok or pan with about 100ml vegetable oil. 
    • Blend or finely chop the shallots and garlic into a smooth paste.
    • Saute the chopped shallots and garlic until fragrant, or about 8 - 10 min.
    • Add the salted bean paste and continue to stir for another 1 – 2 min.
    • Chop up the Gula Melaka. Add it to the wok and stir for another 3 – 4 min.
    • Add chicken pieces and mix well.
    • Add the potato wedges to the wok.
    • Add about 400ml water to the wok and mix well. The water should be enough to cover the chicken.
    • Bring to a boil, once boiling, lower the heat and continue to simmer until the potatoes are tender and chicken is fully cooked, or about 20 min.


Plate and Serve!

After about 20 min, add the dark soy sauce to the wok, mix well and simmer for another 3 – 4 min. The dish is now ready to serve.
