  • chicken:

    2 tbsp vegetable oil

  • 1 small onion 

  • 3 bay leaves 

  • 2 cinnamon sticks 

  • 8 cardamom  

  • 1 loumi (dried lime)

  • ½ kg chicken breast 

  • 2 L water 

  • 1 tsp salt 

     

  • mloukhiya: 

    1 tbsp vegetable oil 

  • 5 garlic cloves   

  • 1 hot green pepper 

  • 1 cup of chopped green coriander

  • ½ kg green mloukhiya leaves  

  • 1 grilled onion 

  • ½ tbsp dry coriander 

  •  1 tbsp white pepper 

  • 1 tbsp salt  

  • 1 tbsp cinnamon 

  • 1 L chicken broth 

  • the rice:

    1 tbsp begetable oil

  • 1 cup vermicelli

  • 2 cups rice 

  • 1 cup water

Mloukhiya with Chicken

Mloukhiya with chicken is a soupy dish that is popular throughout the Middle-East, East Africa and North Africa. Often confused with spinach, Mloukhiya -also known as Jew's Mallow -is the star of this dish with its distinctive green color and texture, almost similar to Okra. The leaves are also nutritious, ideal for those who have been fasting for hours. Mloukhiya is usually made with chicken but if you're prefer beef or lamb, make that substitute! Serve this easy dish with a side of rice and you'll have yourself a nourishing Iftar!

Instructions

  1. Prepare chicken

    • Pour the oil into a saucepan.
    • Add the onion, bay leaves, cinnamon, cardamom and lomi.
    • Add the chicken breasts, water, salt and boil the mixture.


  2. Mloukhiya

    • Pour the oil into a saucepan.
    • Add the chopped garlic and mix.
    • Add the cut hot green pepper mix.
    • Add the green coriander and mix.
    • Pour the vegetable oil into another saucepan.
    • Add the mloukhiya leaves and mix until it withers.
    • Add the mloukhiya to the garlic mixture.
    • Add the cut chicken breasts.
    • Add the grilled onion, dry coriander, white pepper, saltand cinnamon.
    • Add the chicken broth.

  3. Rice

    • Pour the oil into a saucepan, add the vermicelli and fry it. 
    • Add in the rice and mix well.
    • Add salt and water.
    • Cook for 20 minutes over low heat.


Plate and Serve!

Put the mloukhiya in a serving dish with the rice aside.
