Ingredients

  • Serves 6 people
  • 4 chicken breasts  

  • 2 cups green freekeh (washed and soaked for 15 minutes)

  • 1 medium onion (chopped)

  • 3 tbsp oil

  • 2 tbsp olive oil

  • ½ tsp cinnamon powder for freekeh

  • ¼ tsp cardamom powder for freekeh  

  • ½ tsp black pepper for freekeh

  • salt to taste

  • 3 ½ chicken stock 

  • 1 cup fried almonds 

  • parsley for garnish

Freekeh with Chicken

Freekeh or Farik is a cereal-like food made from green durum wheat. This wheat grain is roasted, dried and rubbed to create its distinct flavor. It’s right up there with quinoa in terms of being a super food, with 6 times the amount of fiber compared to the same amount of quinoa. Most commonly found in Levantine and North African cuisines, Freekeh has smoky, earthy flavors and chew textures, which make it a great grain to pair with chicken.

Instructions

  1. Sear chicken

    • In a cast iron skillet, add olive oil and sear the chicken on both sides till golden. 
    • Season with salt, pepper and cinnamon and transfer to oven to continue cooking through for about 20 minutes.


  2. Saute onions

    • In a large pot,add 2 tablespoons of oil and sauté the onions for 2-3 minutes. 
    • Drain freekeh and add onion. Keep stirring on medium heat, until freekeh dries a bit. Add the freekeh spices and stir for 1 minute.


  3. Add stock

    • Add 3½ cup chicken stock to freekeh. When it boils, covertightly and continue cooking on low heat for 45 –50 minutes. Check on freekeh every 15 minutes so it won't dry out and burn, but don't mix with spoon.


Plate and Serve!

Dish the freekeh onto serving plate, slice the chicken and place on top, the garnish with fried almonds and parsley.
