Ingredients

  • Serves 4 people
  • 1 ¼ cup brown lentils

  • 1 ¼ cup course bulgur (washed and strained) - a type of cereal grain

  • 4 large onons (finely chopped)

  • ½ cup olive oil

  • salt (to taste)

  • 1 tsp ground cumin

  • water (for boiling)

     

  • salad ingredients:

    1 small head of red cabbage (finely sliced)

  • 2 garlic cloves

  • ¼ cup vinegar

  • salt (to taste)

  • ¼ cup olive oil

  • squeeze of lemon

Bulgur Mjaddara

Bulgur Mjaddara

Bulgur Mjaddara is traditionally made from lentils. rice, groats, and topped with fragrant and sweet sautéed onions. There are plenty of variations to this Levantine dish, but here we used lentils and Bulgar (groats). It is cheap and easy to get ingredients (in the Mediterranean area) often makes it a popular working man's meal, but that does not mean it's not tasty and nutritious! We love the caramelized onions in this dish (who doesn't?!). Pair it with a side salad for some sweet crunch.

Instructions

  1. Boil lentils

    • Boil the lentils in water and cumin till almost cooked. 
    • Drain and keep the liquid.


  2. Fry onions with lentils

    • Cook the onions in the olive oil till dark brown then we add 2 and a half cups from the boiling liquid and let it cook with the onion for 10 minutes till the liquid turns dark brown. 
    • At this point, we add the cooked lentils and let it boil with the onions till it almost absorbs the liquid for almost 5 minutes.


  3. Add in bulgur

    • Add the washed and strained bulgur and top with more liquid to cover it, about 1cm above the bulgur.
    • Now we cover and reduce heat till cooked.
    • Top it off with a drizzle of olive oil and fluff using a fork.


  4. Make salad

    Mix all the dressing ingredients and pour over the cabbage and mix well. Serve next to mjaddara.
