Ingredients

  • blended items:

    3 medium onions

  • 4 garlic cloves 

  • 2 sticks lemongrass (thinly sliced) 

  • ½ inch (turmeric)

  • 2 inch galangal 

  • 6 red chillies 

  • 1 cup dried prawns

     

  • other ingredients: 

    2 cups grated coconut toasted

  • 1 tbsp curry powder 

  • salt 

  • sugar 

  • 1 tbsp tamarind paste

  • 6 tbsp oil

Serunding Udang

Dried shrimp floss or Serunding Udang is such an addictive condiment that we can have it on its own. We absolutely love the fluffy and slightly stringy texture of the caramelised coconut shreds and dried shrimp. The aroma of lemongrass, curry and galangal will definitely fill your house while you are making this. Sprinkle it on rice, stuff it in fried pastry or use it as a garnish for curries.

Instructions

  1. Prepare toasted coconut

    • In a wok, add the grated coconut and toast for about 4 to 5 minutes until golden brown. Set Aside.


  2. Prepare the Serunding paste

    • In a blender, add in all the blended items
    • In the same wok, add in the oil and cook the blended items along with the curry powder and tamarind paste and cook about 10 to 15 minutes. 
    • Stir constantly until the mixture dries up.


  3. Add toasted coconut

    • Next, add in the toasted coconut and season it with salt and sugar.
    • Continue to cook the Serunding until it is dry, toasted and very fragrant.
