If you're looking for something to up your intake of protein for the day, infuse the slow energy releasing properties of Medjool dates with protein-packed eggs into one sweet and savoury omelette. The double-act of sweetness from dates and savouriness of eggs will leave your tastebuds dancing! This omelette is best served with a side of toasted bread or salad.

Instructions

  1. Add in egg mixture

    • In a pan over low heat, add cooking oil.
    • Pour in beaten eggs.
    • Add chopped pitted dates, spring onions, chilli powder and sprinkle salt.


  2. Scramble egg

    • Leave to cook slightly before scrambling the egg.
    • Turn heat off.

Plate and Serve!

Serve with toasted bread and salads on the sides.
