  • 1 cup minced beef

  • ¼ cup cooked green moong beans

  • 1 red onion (sliced thinly)

  • 2 tsp garlic paste

  • 1 tsp ginger paste

  • 1 tbsp dried shrimp

  • 1½ cups rice

  • 6 cups water

  • 100 ml coconut milk

  • 1 carrot (diced)

  • 1 stalk celery (diced)

  • 2 tbsp cooking oil

  • ½ tsp black pepper

  • ½ tsp cumin powder

  • 2 pcs cardamom

  • 1 cinnamon stick

  • 4 black cloves

  • salt (to taste)

  • garnish:

    fried shallots

  • spring onions (sliced thinly) 

  • coriander leaves (slices thinly)

Bubur Lambuk

We've all enjoyed a bowl of Cantonese porridge, but did you know that there's an equally delicious Malay porridge counterpart? Bubur Lambuk is a common staple during the fasting month of Ramadhan -mosques can usually be seen distributing containers of the spiced, meaty congee. While Cantonese porridge comes with a multitude of side dishes to complement it, Bubur Lambuk has all the workings in it -vegetables, beef and lifting cardamom, cumin and cloves. For us, it’s the ultimate comfort food that's easy on your stomach during the fasting month.

Instructions

  1. Prepare dried shrimp

    • In a heated pan, toast the dried shrimp until nicely toasted.
    • Transfer into a mortar and pound until powder form.
    • Set aside.


  2. Cook meat

    • In a medium size pot, over medium heat add oil.
    • Add sliced onion. Leave to cook till fragrant.
    • Add minced meat, garlic and ginger paste.
    • Stir well.

  3. Add spices and vegetables

    • Add cinnamon, cloves and cardamom. Stir.
    • Add carrot and celery. Leave to cook.
    • Add water. Stir well.

  4. Boil congee

    • Add black pepper, white pepper
    • Leave to boil a bit before adding rice.
    • Leave rice to boil and lower heat until rice is soft.


  5. Add coconut milk and seasonings

    • Add coconut milk, toasted dried shrimp powder and cumin. Season with salt. Stir.
    • Leave to cook till rice softened. Add cooked green moong beans.Leave to cook for about 10 mins. Turn heat off.


Garnish and Serve!

Garnish with fried shallots, spring onions and coriander leaves
