  • red bean porridge:

    100 g dried adzuki beans

  • 500 ml + 1L + 150 ml water

  • 1 tbsp glutinous rice powder

  • 2 tbsp brown sugar

     

  • rice cakes:

    100 g glutinous rice flour

  • 2 tsp fine sugar

  • 1 pinch fine salt

  • 80 ml warm water

     

  • garnishing:

    1 tbsp walnuts

     

  • ¼ tsp cinnamon powder

Heavenly Danpatjuk (Sweet Red Bean Porridge)

This sweet Korean red bean porridge is perfect for a midday snack - even if you’re not searching for tiger spirits with IU in an episode of Hotel del Luna. Normally eaten on cool days, Danpatjuk makes for a deliciously smooth and silky treat to warm your belly. The adzuki beans are highly nutritious too, loaded with fibre to promote digestive health. Best eaten with a simple topping of chewy rice cakes and walnuts, as well as a sprinkle of cinnamon powder.

Instructions

  1. Cook the Beans

    • First, wash and pick through the adzuki beans discarding any that float.
    • Place the beans in a saucepan with the first 500ml of water, and bring to a boil. After 5 mins, strain and wash the beans again.
    • Return the beans to the pot with 1 litre of water and cook at a low simmer for at least 1.5 hrs or until the beans are tender.
    • Leave the beans to cool.


  2. Blend & Strain

    • Using an immersion (hand blender), blend the beans until the mixture is quite fine but not pureed.
    • Pass the mixture through a sieve, mashing through. Discard the solids.
    • Add the glutinous rice flour to the 150ml of water, stir till dissolved, and add to the bean mixture.
    • Return back to the pot, mix in the sugar, and heat gently for another 12 minutes.
    • You may add more water and further blend with the immersion blender to achieve your desired consistency.
    • Take off the heat while you make the rice cakes.

  3. Make the Rice Cakes

    • In a medium bowl, mix the glutinous rice flour, sugar and salt together.
    • Pour in the warm water, stirring till pliable dough comes together. 
    • Knead for 5 minutes, then separate into 4 pieces. Roll each into a cylinder, and cut, or pinch off to shape into balls or discs at your preference.
    • Bring a medium pot of water to the boil, then add the rice cakes, cooking till they float (about 2 mins). Remove from the pot with a slotted spoon. You may store them in clean water until using.

Plate and Serve!

Serve the danpatjuk warm, garnished with rice cakes, walnuts and cinnamon powder. Additional brown sugar may be served on the side.
