  • shabu shabu:

    approx. 200 g thinly-sliced pork belly or pork loin

  • 400 ml water

     

  • salad:

    1 cabbage

  • 1 white onion

  • 1 large green onion

  • 1 small green onion

  • 1 tomato

     

  • dressing:

    1 tsp toasted sesame seeds

  • 4 tbsp ponzu sauce

  • 1 tbsp sesame oil

  • 1 tbsp soy sauce

I was introduced to this dish by my Japanese friend in NYC, and I could never forget it! Inspired by the simplicity of the ingredients that juxtaposes the complexity of the flavors, I’ve come up with an easy yet tasty recipe for this Pork Shabu-shabu Salad. From the crispness of the fresh cabbage to the savory pork, down to the zesty ponzu sauce, this salad is an absolute flavor zinger! Suitable for ketogenic diets, this healthy salad only takes 15 minutes to make.

Instructions

  1. Prepare vegetables

    • Half, then slice cabbage head into paper thin slices. Lay the bottom layer of the bowl.
    • Half, then slice white onion into paper thin slices as well. Lay them as the second layer in the bowl.
    • Slice large green onion into paper thin slices. Lay them as the third layer in the bowl.
    • Quarter up a tomato and add to salad.
    • Slice small green onion. (to add last as garnish over pork)

  2. Boiling pork

    • Bring water to a rolling boil.
    • Cook slices of pork, it shouldn’t take longer than 2 minutes.
    • Slice and add to top of salad.
    • Garnish with the sliced small green onion and ground black pepper.

  3. Make salad dressing

    • Mix ponzu, sesame oil, and soy sauce, then drizzle over the salad. Note: Cabbage won’t take easily to the dressing, so it takes time and mixing to let the cabbage soak up the taste.
    • Top off with toasted sesame seeds, and enjoy!
