  • 100 g prawns  (prawns can be substituted with other seafood such as crab meat, squid, anchovies, etc or sources of protein such as beef, mutton, or chicken. Recipe can also be changed to a pure vegetarian dish by replacing seafood or meat withother veggies such as peas, corn kernels, french beans, etc.)

  • 5 pieces button mushroom (diced)

  • 2 grade b eggs

  • 10 x 2.5cm tubes japanese cucumber 

  • 3 garlic cloves (minced)

  • 5 shallot cloves (sliced) 

  • 3 tbsp lidquid aminos

  • ½ tsp turmeric powder 

  • ½ tsp mixed herbs 

  • 3 tbsp cooking oil

     

  • accompaniments and garnish:

    salmon sashimi

  • wasabi

Keto Cauliflower Sushi Cups

If you’re on keto, you know cauliflower is a lifesaver. Here, replace sushi rice with naturally sweet cauliflower. It’s also a great way to add more servings of vegetables to your day. These Keto Cauliflower Cucumber Cups pair so well with curries, sautéed basil chicken, or, can simply be enjoyed on their own.

Instructions

  1. Prepare cauliflower rice

    • Grate cauliflower florets

  2. Prepare Cauliflower rice

    • Heat frying pan or wok with cooking oil. Add in sliced shallots, followed by garlic. Stir fry for a few minutes or until golden brown.
    • Add in prawns and mushrooms. Stir as it cooks forapproximately 30 seconds. Pour in grated cauliflowerandcook for about 5 minutes until light brown. 
    • Add 1 tsp of cooking oil. 
    • Crack eggs into wok and cook undisturbed until the yolks are moderately set, approximately 30 seconds, then stir evenly.
    • Stir in all seasonings (soy sauce, turmeric powder, mixed herbs). Remove fromheat.
    Prepare Cauliflower rice


  3. Prepare Cucumber cups

    • Take a 2.5cm cucumber tube. Using a fruit scooper or small teaspoon, scoop out the flesh in thecentre of the cucumber, making cucumber cups.
    • Scoop 1 tbsp of cauliflower fried rice to fill up each cucumber cup.

  4. Prepare the Accompaniments and garnish

    • Arrange salmon sashimi slices into a flower. Serve along with wasabi.


Plate and Serve!

Best to serve the cauliflower fried rice when hot.
