  • chicken marinade (can be done day before):

    200 g chicken fillet (cubed)

  • 1 tbsp plain yogurt

  • salt to taste

     

  • biryani sushi ingredients:

    1 small onion (finely diced) 

  • 1 tbsp cooking oil

  • ½ package biryani mix

  • 1 ½ cups water

  • 1 cup short-grained rice

  • 2 sheets seaweed

     

  • Accompaniments and Garnish:

    cashew nuts

  • raisins

  • coriander

  • shredded carrot

  • cucumber pickle

Chicken Biryani Sushi Rolls

Biryani is an amazing royal Indian delicacy.It’s a mixed rice dish that is not unlike curry if you break it down to the individual ingredients and steps, and combines semi-cooked rice with a rich gravy to infuse flavours in the cooking steps. In this Chicken Biryani Sushi Rolls recipe, sushi rice is cooked in aromatic chicken biryani spices enriching the taste of traditional sushi and giving this traditional rice roll a more delightful look.

Instructions

  1. Marinate chicken

    • Cut chicken into cubes.
    • Add in yogurt and sprinkle a pinch of salt over chicken cubes. Mix well.
    • Leave it in to marinate in the refrigerator overnight.

  2. Prepare the chicken biryani

    • Heat oil in frying pan, add diced onionand fry for a few minutes or until golden-brown.
    • Saute chicken.
    • Add Biryani Mix and water.
    • Pour in shortgrain rice, stir until well combined.
    • Cook (covered) over low heat for 30minutesor until the rice is fully cooked.
    • Add raisins and cashew nuts. Stir well.

  3. Prepare Maki Sushi Roll

    • Place a sheet of seaweed/nori on sushi mat,spread chicken biryani on it. Start from the middle, spread out evenly.
    • Tuck the front edge of the nori into the roll and remove the mat as you continue to roll the sushi. 
    • Roll slowly to ensure that the sushi comes out evenly.

  4. Prepare the Accompaniments and garnish

    • Shred cucumber and carrot.
    • In a container, soak shredded cucumber and carrot in apple cider vinegar, and sprinkle some sugar on top.
    • Leave it for at least 30 minutes or overnight.

Best served when hot.
