    80 g Big Red Chilies

    70 g Galangal

    50 g Curly Red Chilies

    Ingredients (B):

    1 stick Lemongrass, smashed and tied in a knot 

    5 Lime Leaves

    2 Knuckles Galangal, smashed

    Ingredients (C):

    10 g Chicken Powder

    50 g Brown Sugar

    15 g Salt 

    Vegetables:

    300 g Bean sprouts

    150 g Carrots

    100 g Cabbage

    100 g Spinach

    200 g Long beans

Got some spare vegetables in the fridge? Try making Urap Sayur, an Indonesian salad recipe usually packed with steamed vegetables including beansprouts, cabbage, spinach and long beans. With a grated coconut seasoning made from a blend of aromatic ginger, lemongrass, galangal and chili for a spicy kick, all you need to do is blanch the veggies and toss them together for a nutritious meal.

Instructions

  1. Blend ingredients

    • In a blender, blend all the ingredients in (A) except the grated coconut. Blend till smooth.
    • In a pan, with enough oil, add in the ingredients in (B), sauté till fragrant. Add in the blended paste and ingredients in (C). Stir well.
    • Once all cooked, add in the grated coconut. Stir until well combined and the moisture of the grated coconut is reduced. 
    • Remove and set aside.

  2. Make urap sayur

    • n a pot of boiling water, blanch all the vegetables and shock them in a bowl of ice cold water to stop the cooking process.
    • Squeeze the excess water out from the vegetables and set aside.
    • In a bowl, add in the vegetables and the spiced coconut. combine well.

Plate and Serve!

Garnish with fried onions and serve. 

| This Urap Sayuran should be eaten immediately, if you want to eat it for the next day, you should separate the ointment spices, don't mix them immediately, mix them later after eating, for longer storage, it is better if the ointment is wrapped in banana leaves and stored in freezer, when you want to use you simply heat it in the microwave
