    6 Egg Yolks

    2 tbsp Butter

    13 g Chicken Powder

    3 g Turmeric Powder

Udang Serabut is a fried Indonesian seafood dish that adds a delightful, spicy crunch to your meal. Its name aptly translates to fibrous shrimp because the eggs that cover the shrimp are fried till it has a similar appearance to fiber. Instructions

  1. Stir fry shrimp

    • Clean the shrimp.
    • Marinate the shrimp with salt, garlic and lime juice. Let it stand for about 10 – 15 minutes.
    • With some oil, stir-fry the shrimp until cooked.
    • Remove and set aside

  2. Udang Serabut Emas

    • In a bowl, add egg yolks, white pepper, turmeric powder and chicken powder. Mix well.
    • In a frying pan, heat up about 500ml of oil. Once it reaches about 130 degrees, add butter.
    • Once the butter dissolves, gradually add in the egg yolk mixture and stir rapidly.
    • This is so that the eggs don’t clump up. Add the cooked shrimp, curry leaves and chili slices. 
    • Continue to stir until the eggs are cooked. This will take about 5 minutes.
    • Remove and drain off excess oil.

Plate and Serve!

Garnish with curry leaves and chilies. Serve.
