Udang Serabut is a fried Indonesian seafood dish that adds a delightful, spicy crunch to your meal. Its name aptly translates to fibrous shrimp because the eggs that cover the shrimp are fried till it has a similar appearance to fiber. This is made possible by drizzling egg yolk into a deep fryer while stirring rapidly, giving the juicy sweet shrimps a yummy crackling exterior to indulge in.

Instructions

  1. Blend chilli paste

    • Remove the chili seeds from the large red chilies and thinly slice the onions.
    • In a blender, add garlic, onions, large red chilies and blend till smooth.


  2. Cook prawns

    • In a frying pan, add about 100 – 200ml of oil and heat it up over medium heat.
    • Sauté the blended paste and add bay leaves, lime leaves, lemongrass and galangal. Sauté until fragrant and the oils are released. Paste will turn lighter in color.
    • Add sugar and chicken powder. Combine well.
    • Put in the shrimp and stir evenly. Make sure all the shrimp are coated well with the chili paste.
    Cook prawns


Plate and Serve!

Garnish with green onions and serve.
