  • 500g Tuna Fillet, 100g each

    500 ml Cooking Oil

     

    Ground Seasoning:

    20g Shallots

    20g Garlic

    100g Big Red Chilies

    15g Cayenne Pepper

    60g Red Tomatoes

    3 tbsp Oil

     

    Spices:

    20g Ginger, crushed

    1 Leek, sliced to 1cm lengths

    2 Bay Leaves

     

    Seasoning:

    15g Sugar

    5g Salt

    15g Chicken Powder

    20 ml Water

     

    Spring onions

Tongkol Jontor is an Indonesian tuna dish with spicy seasoning. Tuna in itself has a pretty distinct salty fishy taste when cooked, and the ground spices in this recipe compliments the strong flavors while providing a nice gravy to pair with rice. This dish packs high levels of heat, so for those who can’t tolerate extremely spicy food, it might be good to reduce the amount of big red chilies used!

Instructions

  1. Fry the fish

    • Cut the tuna fillets into 100g each.
    • In a skillet, heat about 500ml of oil over medium heat and fry the fish until cooked or golden brown.
    • Remove and drain off excess oil.


  2. Make the seasoning

    • In a blender, add onions, garlic, large red chilies, cayenne pepper, tomato and some cooking oil. Blend well.
    • In a frying pan with about 50ml of oil over medium heat, sauté the blended spices, ginger, bay leaves until fragrant.
    • Once the spices are cooked with oils separated at about 10 minutes, remove excess oil and reduce the heat.
    • Add sugar, salt, chicken powder and water.
    • Combine well.


  3. Combine

    • Add in the tuna fillets, spring onions and let the fish absorb in the sauce for about 5 minutes.
    • Remove and serve
