Tengkleng is a Javanese dish born out of frugality in colonial times, where the best cuts of meat were given to the rich, leaving goat bones to the poor. The best flavors are drawn out from these bones either in a pressure cooker or extended simmering in a spiced yellow soup. Tengkleng is almost like a curry dish, with a thinner consistency. This traditional Indonesian recipe has been elevated with the addition of rica-rica spices, giving the already rich stock a beautiful complexity to delight the senses.

Instructions

  1. Presto The Meat

    • With a pressure cooker, add lemongrass, bay leaves, lime leaves, ginger, salt and lamb ribs.
    • Seal the pressure cooker and bring it to a boil.
    • Once the water boils, start the clock and presto the meat for 30 minutes.

  2. Rica spices

    • In a blender, add shallots, garlic, cayenne pepper, large red chilies and candlenut. blend till smooth.
    • In a frying pan, heat about 150 ml of oil over medium heat and add the blended spice, ginger, lemongrass, bay leaves and lime leaves. Sauté until cooked and fragrant with oils separated. 
    • Add the cooked lamb ribs into the sauce and coat well.
    • Add water, brown sugar, pepper, beef powder, msg, sweet soy sauce and cook till water is reduced and thickened.

Plate and Serve!

Sprinkle some fried onions, leek, cayenne pepper and serve.
