Telur Dadar Padang is a Padang-style omelette that is characterized by its thickness and soft fluffy texture. Besides its unique appearance, this egg-cellent dish is also filled with great flavors. Together with some leeks and chili, coconut serundeng or grated coconut is added into the mix for a rich and savory taste.

Instructions

  1. Coconut Serundeng Making

    • Prepare a non stick frying pan, then saute the grated coconut without oil until it dries. 
    • Saute it using low heat or until golden brown. Lift & set aside.


  2. Red Seasoning Making

    • Smoothly blend, large red chilies, shallots (1 recipe for 2/20 gr) and garlic.
    • Prepare a frying pan, and oil - + 3 -4 tablespoons, then saute the spices that have been mashed until cooked or until they produce a little oil then set aside until cool.

  3. Omelette Making

    • Prepare a medium sized bowl, then break the eggs into a bowl, then thinly slice the remaining shallots (about 20 grams) into the bowl.
    • Add the green onions, flour, coconut serundeng, red spices, salt, chicken powder and ground white pepper.
    • Stir the eggs until all ingredients are combined using a balloon whisk.
    • Prepare a non-stick frying pan about 20 cm in diameter, then add 300 ml of cooking oil, heat it using low heat, 
    • After the oil heats up, add the egg and cover the pan, cook for about 20 minutes over low heat, after 15 minutes, turn the eggs and cook again for about 7 minutes.

Plate and Serve!

Prepare a serving plate, cut the eggs into pieces according to your taste and arrange them on a serving plate. Serve
