Tahu Gejrot is an Indonesian dish typically found in Cirebon, West Java. While the crispy tofu puffs are the main ingredient, the sauce is truly the highlight of the dish. Made of shallots, garlic, green cayenne pepper, brown sugar, sweet soy sauce and tamarind, it is the perfect blend of sweet, spicy and sour.

Instructions

  1. Deep fry tofu puffs

    • In a frying pan with some oil over medium heat, fry the tofu until golden brown.
    • Cut it according to taste

  2. Make sauce

    • In a pestle and mortar, coarsely grind shallots, garlic, cayenne pepper and salt.
    • Add brown sugar and grind further till the brown sugar turns into a smooth paste.
    • In a pan, heat up water, tamarind and sweet soy sauce till warm. Add to the grounded paste and mix well.
    Make sauce


Plate and Serve!

Pour the sauce over the tofu and serve.
