500 g Potato
2 g Salt
7 g Oil
102 g Cornstarch
50 g Cheddar Cheese, grated
300 ml Oil
Peel the potatoes and steam them until they are cooked.
Once they are cooked, blend until smooth.
Add salt and 7 ml of oil and combine well.
Add cheddar cheese, cornstarch and leek. Mix well.
Transfer the mashed potatoes into a piping bag.
Heat up 300ml of oil over medium heat.
Once the oil has been heated up, pipe the mashed potatoes into the hot oil.
Flip the potato sticks so that they fry evenly on both sides.
Drain off excess oil and repeat for all.
Best served when hot.
