    300 gr chicken thigh fillets 

    1 tsp salt

    1 tsp black pepper 

    Sambal Dabu – Dabu (B):

    2 pcs Red Tomatoes, diced

    30 g Red Cayenne, thinly sliced

    5 cloves Shallots, thinly sliced

    5-7 Lime Leaves, thinly sliced

    50 ml Cooking Oil

    Sambal Seasoning (C):

    1 tbsp Sugar 

    ½ tsp Salt 

    1 ½ tsp Chicken Powder

    2 tbsp Lemon Juice

    Lime Rice Ingredients (D):

    300 g Rice 

    1 tbsp Garlic, chopped

    5-7 Lime Leaves, thinly sliced

    2 tbsp Butter / Oil

Se’I Ayam Sambal Dabu

Se’i is a unique specialty of the local cuisine in East Nusa Tenggara, which consists of thinly sliced meats smoked over burning wood. Traditionally, wood from the gum-lac tree is used to smoke meats like venison or pork for up to 9 hours, resulting in a tender juicy delight that is full of earthy flavors. Try your hand at the simplified chicken version of this Indonesian delicacy to enjoy at home

Instructions

  1. Marinate chicken

    • Marinate the chicken thighs with salt and black pepper for about 1 hour.
    • Prepare the grill and saw dust. Wet the sawdust so that it produces a lot of smoke in the grill.
    • Turn the griller on and let the smoke develop. Once well smoked, reduce the heat and put in the chicken. Leave it for about 1 hour.
    • Once it is well cooked, remove and set aside.

  2. Sambal Dabu

    • n a medium heat resistant bowl, add in the diced tomatoes, lime leaves, shallots, red cayenne and the seasoning ingredients in (C). Stir it well. 
    • Heat up the oil till it’s boiling hot and pour it into the bowl. Mix it well and set aside.
    • In a medium fry pan, add in some oil/butter and garlic. Sauté till fragrant and add in the rice and lime leaves and season to taste. Cook well and set aside.
    • Add a fried egg or omelette on the side.

  3. Saute chicken

    • Slice the smoked chicken into thin slices. 
    • In a medium pan, add in some oil and saute the chicken with 1-2 tbsp of sambal dabu-dabu. Mix well and set aside.


Plate and Serve!

In a serving plate, plate some rice and smoked chicken. Add a fried egg or omelette on the side. Drizzle the remaining sambal dabu-dabu over the smoked chicken.
