  • 150 g firm tofu

    50 g tempe (optional)

    300 ml cooking oil

    60 g long beans, cut 4 cm length

     

    Ground spices :

    25 g shallots

    30 g garlic

    5 g coriander

    10 g turmeric

    10 g dried shrimp

    15 g curly red chili

     

    2 bay leaves

    2 kaffir lime leaves

    1 stick lemongrass, smashed

    500 ml water

    100 ml thick coconut milk

    15 g galangal

     

    30 ml cooking oil

    12 g salt

    10 g sugar

    15 g chicken stock powder

    10 g fried onion

Sayur Tahu Kuah Santan (Long Bean and Tofu in Coconut Milk Gravy)

Vegetable and tofu in creamy and rich coconut milk stew makes Sayur Tahu Kuah Santan a delicious side dish for lunch or dinner. The spices enhance the coconut milk and gives it a nice kick! This dish is perfect for days when you want to take a break from eating but still fill your tummies with something hearty.

Instructions

  1. Making Long Bean and Tofu in Coconut Milk Gravy

    • Cut tofu and tempe (optional) according to size preference, and  fry until slightly brown.

    • Blend the spices ingredients into a paste.

    • Add the cooking oil in a pan and sauté ground spices with bay leaves, kaffir lime leaves, lemongrass, and galangal for 7 - 8 minutes over medium heat while stirring.

    • After the ground paste is cooked, add water, salt, sugar, and chicken stock powder then stir again until everything is well blended.

    • Add tofu and tempe then cook until the liquid boils.

    • Once it boils, add coconut milk and keep stirring continuously. 

    • Finally, add the long beans and cook until the beans are softened.

Plate and Serve!

Prepare a serving bowl, then pour the Sayur Tahu Kuah Santan into the bowl. Top with fried onion and serve.
