Boil Base
In a saucepan, add the water, shallots, finger root, sugar and salt. Bring to a boil.
Add Ingredients
Add the corn and continue to boil the soup until the corn is half cooked, which should take around 5 minutes.
Add the carrots and cockles and cook for another 5 minutes, until all the ingredients are well cooked.
Add the spinach and turn off the heat so that the spinach does not overcook. Mix well.
