  • Serves 3
    • 1 litre of water

    • 5 shallots, finely sliced

    • 5 cm temu kunci, finger root or Chinese ginger, bruised

    • 1 tablespoon sugar

    • 1 teaspoon salt

    • 1 sweet corn, cut into pieces 

    • 100 g carrots, thinly sliced 

    • 300 g of spinach leaves 

    • 10 cockles (optional)

Sayur Bening (Indonesian Clear Vegetable Soup)

Indonesian Clear Vegetable Soup is usually served along with steamed rice and protein dishes for sahur since it’s light and easy to eat, early in the morning. In this version, cockles are added for extra protein.

Directions

  1. Boil Base

    • In a saucepan, add the water, shallots, finger root, sugar and salt. Bring to a boil.


  2. Add Ingredients

    • Add the corn and continue to boil the soup until the corn is half cooked, which should take around 5 minutes.
    • Add the carrots and cockles and cook for another 5 minutes, until all the ingredients are well cooked.
    • Add the spinach and turn off the heat so that the spinach does not overcook. Mix well.

  3. Plate and Serve

    • Serve the soup while it’s hot.
