    Skewers

    Seasoning (A) :

    5 cloves Garlic

    10 cloves Shallot

    3 cm Galangal 

    4 tsp Coriander

    3 tbsp Tamarind Water 

    1 tbsp Brown Sugar 

    1 tsp Salt

    1 tsp White pepper 

    1 tsp Beef Powder 

    Tomato Sambal (B) :

    1 pc Red Tomato

    3 pcs Green Tomato

    3 pcs Red Cayenne 

    3 pcs Green Cayenne 

    5 clove Shallot 

    1 tsp Salt

    2 tsp Sugar

    2 Limes

Sate Maranggi

Sate Maranggi is a Sundanese-style skewered meat dish that is not only rich in history, but also in flavor, especially when eaten with the spicy tomato sambal. The key to this Indonesian recipe is in the marination, so make sure you season your meats for at least an hour. As far as tradition goes, keep to three chunks of bite-sized meat per skewer for a tender juicy result.

Instructions

  1. Marinate the meat

    • Cut the meat into pieces following meat fiber to about 1 finger joint length, put it into a bowl and set aside. 
    • Blend the seasoning ingredients in (A) together until smooth and mix it well with the meat. Chill it in the fridge for 1 – 2 hours.

  2. Tomato Sambal

    • Cut the green and red tomatoes into either small slices or think strips. Cut the cayenne peppers & shallots. Put them altogether, add lime juice, salt and sugar. Mix well. 


  3. Prepare the satay & grilling

    • After it sets for 1-2 hours, take out the beef from the fridge. Skew the meat onto each skewer. Repeat to the other meat.
    • Preheat the grill,  brush it with oil then grill each side of the meat until cooked. 
    • After it’s cooked well, remove and set aside.
