    1 litre cooking oil       

    Ingredients (A) :

    125 g Tapioca Flour 

    2 tbsp Rice Flour            

    1 Egg Yolk                 

    65 ml Instant Coconut milk  

    ¼ tsp Salt 

    3 tbsp Sugar                   

    ½ tsp Vanilla Powder 

    400 ml Water                  

    ½ tsp Baking Powder   

    Ingredients (B) :

    200 g Rice Flour 

    10 g Tapioca Flour 

    1 tsp Sugar                      

    250 ml Water

An ubiquitous snack throughout Indonesia, Pisang Goreng or banana fritters are popularly sold with other fried companions by streetside pushcart vendors across the country. This sweet and crispy treat goes perfectly with a warm cup of tea for a relaxing afternoon. Indulge yourself in this guilty pleasure by topping it with a drizzle of sweet condensed milk and chocolate sprinkles.

Instructions

  1. Kremes/Crispy Flakes (crunchy part of the batter)

    • In a bowl, add in all the ingredients in (A) and mix well. 


  2. Flour Dip/Batter

    • In a bowl, add in the ingredients in (B) and mix well


  3. Carve the Banana

    • Peel the banana and divide into 3-4 parts without breaking the “root” at the bottom. This is to ensure a ‘fan’ shaped Banana fritter. 


  4. Fry the Banana

    • Prepare a large and deep pan. Pour the oil into the pan. Once the oil is bubbling, use a ladle scoop and sprinkle some batter into the pan, to get the crispy flakes to the surface. 
    • Take the fan shaped banana and dip into the batter and place it into the pan close to where the crispy flakes are being fried. 
    • Let it bathe around in the oil. Once the colour has turned golden brown, fish out and put to the side. Once the fried bananas are done, fish out the crispy flakes from the deep fried pan and set aside. 
    Fry the Banana


Plate and Serve!

Once slightly cooled off, yet warm, set the banana fritters on a plate and, and include the Crispy flakes to enhance both texture and taste.
