  • 250 gr Pacet Shrimp 

    10 gr Fresh Basil 

    50 gr grated Coconut 

    Banana leaves - scale accordingly

    4 pcs Toothpicks

    4 Bay leaf 

     

    Ground seasoning:

    10 gr Garlic

    15 gr Shallot

    2 Candlenut

    2 gr Turmeric

    5 gr Shrimp Paste

    2 pcs Large Red Chili

    1 stick Lemongrass 

     

    Seasoning:

    1 tsp Chicken Powder

    1 tsp Salt

    1 ½ tsp Sugar

Find warmth in the flavors of Pepes Udang, steamed prawns wrapped in banana leaves. Marinated in a blend of tantalizing spices like candlenut, turmeric, and lemongrass, this Indonesian dish is easy to prepare and simply lets the steaming do the work for you. Just remember to preheat the banana leaves beforehand so the flavors can seep into the prawns for you to enjoy at every bite.

Instructions

  1. Peel shrimp

    • Remove the skin from the head to the tail. Set aside.


  2. Make paste

    • Blend all the ingredients half-coarsed. Add some water or oil to blend it easily


  3. Steam pepes udang

    • Preheat the steaming pan (add some water and wait until it is perfectly boiled).
    • In a different bowl, mix the ingredients altogether, add some seasoning and stir it well. Put aside.
    • Prepare some banana leaves, put a bay leaf and some fresh basil leaves onto it followed with enough shrimp and the seasoning has been made.
    • Wrap the batter, using roll the leave technique 
    • Fold each tip/end and seal it with tooth-picks. Repeat this process until finished. 
    • Put all wrapped batter inside the boiled steam pan for 30 mins until it is well cooked.
